SALAD:

5 baby cucumbers, skins on sliced

A few slices of red onion, sliced thin

½ cup tomatoes, cherry or roma, chopped

1/4 red bell pepper, chopped

Fresh mozzarella balls cut in half or quartered (optional)

Avocado (optional)

Olives (optional)

 

DRESSING:

½ cup olive oil

1 to 2 tbsp brown rice vinegar

1 tbsp umeboshi vinegar

1 tbsp mirin

A few drops of Stevia to taste

1 tsp Herbamare (mildly flavored salt), or to taste

Dash cayenne pepper or chili flakes (optional)

 

Put all vegetables in a bowl, add dressing ingredients and toss. Adjust flavors. Chill and serve.
